Uma das mais amadas comidas dos brasileiros pode ter vindo de longe<\/span><\/em><\/p>\n\n\n\n

Embora tenha ganhado forma, textura e os ingredientes locais<\/a>\u00a0(mu\u00e7arela, frango e carne mo\u00edda, por exemplo), o pastel foi inserido\u00a0na nossa cultura<\/a> por imigrantes do Extremo Oriente. Ou essa \u00e9 a hip\u00f3tese<\/a> mais aceita. A origem exata da receita n\u00e3o foi registrada, nem foi muito pesquisada, como relatou o coordenador do Centro de Pesquisas em Gastronomia Brasileira da Universidade Anhembi Morumbi, Ricardo Maranh\u00e3o.
A ideia \u00e9 que o pastel teria se originado do chun juan, o rolinho primavera. O prato chin\u00eas \u00e9 feito com massa de farinha, recheio de vegetal e assado em uma frigideira untada. Por volta de 1890, imigrantes chineses j\u00e1 vendiam os rolinhos no Brasil, por vezes com os recheios adaptados ao paladar local, como a carne mo\u00edda.
E simplificando a massa folhada para uma camada s\u00f3, esse pr\u00e9-pastel ainda n\u00e3o era popular. A ascens\u00e3o veio com a persegui\u00e7\u00e3o aos japoneses na Segunda Guerra.
Com vergonha e medo de serem escorra\u00e7ados, j\u00e1 que o Brasil fez parte dos Aliados, os japoneses aproveitaram a ignor\u00e2ncia ocidental em rela\u00e7\u00e3o \u00e0 diferen\u00e7a entre sua cultura e a dos chineses, e se camuflaram nos h\u00e1bitos dos outros. Eles, assim, assumiram a batuta do preparo e venda de past\u00e9is. A comunidade japonesa no Brasil j\u00e1 ent\u00e3o era muito maior que a chinesa.
Isso permitiu ao pastel se popularizar. Come\u00e7aram a surgir pastelarias por S\u00e3o Paulo, e tamb\u00e9m as barraquinhas na feira, j\u00e1 que muitos japoneses tamb\u00e9m eram feirantes, produzindo no cintur\u00e3o verde da capital paulista.
De S\u00e3o Paulo, chegaria ao Rio de Janeiro, Belo Horizonte, e, enfim, ao Pa\u00eds inteiro. Com varia\u00e7\u00f5es locais, o pastel deixou de ser uma especialidade ex\u00f3tica para ganhar o status de genu\u00edna cria\u00e7\u00e3o brasileira.<\/p>\n\n\n\n
