Coloque em uma vasilha, adicione o sal, o vinagre, cubra com \u00e1gua e deixe de molho por duas horas. Escorra e coloque em uma panela de press\u00e3o grande. Cubra com \u00e1gua e cozinhe por cinco minutos depois de iniciada a press\u00e3o. Desligue, deixe sair a press\u00e3o e abra a panela. Escorra e volte o mocot\u00f3 para a panela. Cubra novamente com bastante \u00e1gua, adicione uma cebola, a cenoura, o sals\u00e3o, tempere com sal a gosto e cozinhe por 40 minutos depois de iniciada a press\u00e3o. Reserve. Transfira o caldo da panela j\u00e1 frio para o liquidificador e bata por um minuto. Aque\u00e7a uma panela com o \u00f3leo e frite a cebola restante e o alho at\u00e9 dourar. Adicione o tomate picado, a pimenta, o cheiro-verde, o extrato e o mocot\u00f3 reservado e refogue por cinco minutos. Acrescente o caldo do liquidificador, acerte o sal e cozinhe at\u00e9 ferver.
