Testes laboratoriais preliminares in vitro da Universidade de Verona, na It\u00e1lia, mostraram que os compostos do caf\u00e9 expresso podem inibir o ac\u00famulo da prote\u00edna tau no c\u00e9rebro \u2014 processo que se acredita estar relacionado ao in\u00edcio da doen\u00e7a de Alzheimer.<br>Em pessoas saud\u00e1veis, as prote\u00ednas tau ajudam a estabilizar as estruturas no c\u00e9rebro. Mas quando certas doen\u00e7as se desenvolvem, as prote\u00ednas podem se agrupar em fibrilas. Dessa forma, elas causam sintomas do mal de Alzheimer, retardando o pensamento e as habilidades de <a href=\"https:\/\/gizmodo.uol.com.br\/comer-couve-e-morango-ajuda-na-memoria-veja-outros-alimentos\/\">mem\u00f3ria<\/a>, entre outras coisas.<br>Para fazer uma dose de caf\u00e9 expresso, for\u00e7amos \u00e1gua quente atrav\u00e9s dos gr\u00e3os de caf\u00e9 finamente mo\u00eddos, criando um extrato concentrado. Eles escolheram a cafe\u00edna e a trigonelina, o flavonoide geniste\u00edna e a teobromina para focar os experimentos. Em seguida, caracterizaram sua composi\u00e7\u00e3o qu\u00edmica usando espectroscopia de resson\u00e2ncia magn\u00e9tica nuclear. Al\u00e9m disso, verificou-se que as fibrilas encurtadas n\u00e3o eram t\u00f3xicas para as c\u00e9lulas e n\u00e3o agiam como \u201csementes\u201d para agrega\u00e7\u00e3o.
